{recipe} Celebrate International Cookie Day with Society Coffee!

Happy International Cookie Day, my little hedonists! With the conscious move towards supporting local small businesses and gifting homemade items gaining momentum more each year, I wanted to share some incredible ideas with you this International Cookie Day. It’s not a secret that I always have a sachet or two of Society Coffee’s instant cappuccinos up my sleeve for the perfect at-home coffee shop experience. A perfect gift on its own for a coffee lover, you can also create amazing treats and eats with the cappuccino sachets, adding a thoughtful and unique touch to your gifts this festive season.

Introduction

Who doesn’t love a cookie? I bake cookies and biscuits quite often in The Little House, and it’s one of my favourite things to gift. There’s something so deliciously indulgent about a good cookie – the combination of crumbly, crispy and chewy leaves one very often wanting more.

To help you up your gifting game, or just provide some inspiration for holiday baking, I’ve adapted the below recipe for caramel stuffed chocolate cookies to incorporate the rich and creamy aromas of Society Coffee’s Caramel Toffee Instant Cappuccino’s.

Caramel stuffed chocolate cookies

Caramel stuffed chocolate cookies

Ingredients
  

  • ½  cup  butter softened
  • large egg
  • 1  egg yolk 
  • 1 tsp vanilla essence
  • 1.5 cups cake flour
  • ½ cup raw cocoa powder
  • 2 sachets Society Coffee Caramel Toffee Cappuccino
  • ½ tsp baking soda
  • ½ tsp flaky salt
  • 1 or 2 rolls of Rolo's, depending how much caramel you want!

Instructions
 

  • Preheat the oven to 180.
  • Line two baking sheets with parchment paper and set aside.
  • Cream together the butter and granulated sugar until light and creamy. You can use an electric mixer or do it by hand. Scrape the bottom and sides of the bowl.
  • Add the egg, mix for 20 seconds, then add the egg yolk. Scrape down the sides, add vanilla extract.
  • Mix until combined. Sift in the flour, cocoa powder, 2 sachets of Society Coffee Caramel Toffee Cappuccino, baking soda, and salt. Mix just until the dry mixture disappears. Scrape the bottom and the sides to make sure the butter is evenly combined.
  • Use an ice cream scoop to scoop out the dough. Flatten it slightly in your palm. Take one or two Rolo's and press it into the center of the flattened dough. Gently wrap the dough around the Rolo, ensuring that it is completely covered. Roll the dough into a smooth ball, making sure there are no cracks where the Rolo might be visible. Place the cookie dough balls onto the prepared baking sheets, leaving some space between each cookie to allow for spreading during baking. Repeat this process with the remaining dough and Rolos until all the cookies are formed and placed on the baking sheets. You can fit 5 on each sheet pan.
  • Before you bake the cookies, slightly press down the dough to flatten it at the centre (gently!).
  • Bake the cookies for 11-13 minutes. Let the cookies cool for 5 minutes and they are best served warm.

In conclusion

What I particularly like about this cookie, is that not only visually does it look absolutely delectable with a crackled top, but it’s not too sweet. The use of the raw cocoa powder tempers down the sweetness, allowing for the Society Coffee cappuccino flavours to seep into every crumb. Chocolate and coffee are friends for a reason, and the great balance that these cookies offer are evident of that. Quick to make, easy to bake and beautiful to gift.  With Society Coffee, you can bring that coffee shop experience to your festive table this year, long after dinner has been served, and without leaving the comfy confines of your home.

Once completely cooled, you can keep the cookies in an airtight tupperware for a few days, but only if you can last that long…
