Introduction
Brothers Ben and Tinnie Momberg apply the knowledge passed down to them through three generations of winemaking to produce wine of exceptional quality and reputation.
As a family vineyard, the Mombergs ensure that the lessons passed down from father to son are preserved and respected. All while still accommodating modern trends and new techniques in the winemaking industry. The beautiful 160-hectare farm is famous for its red cultivars. Tinnie has showcased his talents with his specialty, the Free-run Pinotage, a unique wine made through natural, un-pressed processes which set it apart from its peers (https://middelvlei.co.za/our-story/).

Background
I’ve never been much of a baker. Lock-down has turned most of us into Jacks of many trades, however. I decided to turn quiet weekend hours into baking experiments. I received a few punnets of guavas in my fresh produce box a few months ago. Looking for any excuse to open a bottle of Middelvlei Rooster Rosé, I turned them into the most decadent dessert.

According to winemaker Tinnie Momberg the conditions for the optimum growth and ripening of the grapes from September through to December, were perfect.

Baked guava and coconut pudding
With its coppery, pale salmon colour, the Rooster Rosé reminded me of my mom’s stewed guavas and custard on a Sunday afternoon. Inspired to recreate something that reminded me of my childhood, I was delighted with this dessert. It’s easy, comforting, filled with seasonal guavas and those warming toasty coconut flavours.

In conclusion
Although a fragrant Rosé is mostly associated with warmer weather and alfresco dining, this blush wine has a place for me even in the midst of winter. A delightful dessert addition, with or without the pudding (!), it warms even the coldest temperatures with a palate of ripe red fruits.
